Well, I have been embarrassingly absent from this blog as of late. which doesn't mean I have been away from the kitchen! (I don't think that's possible?) I have been busy making new things, trying new foods, and sleeping. Oh and having a sinus infection. But my New Year's Resolution is to stick to a low-carb way of eating (no sugars, no grains, few to no starches) for the year, just to see how my body likes it. So for the most part I think my foods here will lean more toward that way of eating (WOE). But I'll try to pick foods that are accessible to most people (and you'd be surprised how much you like some of the substitutions).
I'll start with introducing cauli-rice. Some of you are like "uh, that's nothing new Mari" to which I say "nope!". This is nothing new, but for people who haven't tried it yet it's AMAZING. Today I'm just going to show you how to make cauliflower into "rice".
Step 1: Take as much cauliflower as you'd like (1 regular head can be between 2-4 servings) and chop it roughly into 2" cubes. You are welcome to keep the stems with the flowerettes - the stems are tasty too!
Step 2: Put your chopped cauliflower into a blender and put in enough water to come just to the bottom layer of cauliflower.
Step 3: BLEND!!!! Actually just give it some pulses to break up the big pieces, then you can blend it all the way. You want to get the cauliflower to about the size of a grain of rice
Step 4: Strain the water out in a mesh colander
Step 5: Spread your cauliflower out on a plastic tray/cutting board for an hour or two (cauliflower naturally has a lot of water in it, and blending it in water can make it more moist)
**You can skip this step but you'll have to saute the CRAP out of the cauliflower to dry it out**
When you're ready to cook the cauliflower just saute some in a hot pan with a little oil (olive oil will work, but you'll want a hot hot pan so avoid EVOO). You just want to get a toast on the cauliflower, you don't want to boil it.
After this step feel free to doctor-up your cauli-rice in any way you see fit!
