Moovin' on up (moooovin' on up!)
Alright, we have moved! And things at the new apartment are finally starting to settle down. Anyone who knows me knows that I don't do well with change, so despite most of the move going well I was a pretty big grump the entire time. Because change can suck it.
Now that we've been in the apartment for a week, I have "my areas" cleaned and organized (kitchen and living room), we have done our first load of laundry, and our clothes are put away. This is about as settled as we can get while I am home full-time (happy spring break btw!).
I got pretty sick a few weeks ago and fell off track with exercising. Despite being off for about a week and a half, I am positive the move itself was a good substitute (my Fitbit said I burned 3400 calories one day!) so I'm not too worried about it. But I missed my videos and the predictability/consistency of having a workout routine, so today is day 3 of getting back on track! Not only with exercise but also with eating clean. No more pre-made stuff, no more fake foods, and I need to lower my sugar intake (there was a day I just ate jelly beans and Chinese food. Oh Lord....). I feel better when I exercise and eat well so I need to get back on that bandwagon.
Today I took a leap of faith and tried eating tomatoes. Those who know me know I really don't like tomatoes. But they're good for me and I got a container of pretty, multi-colored mini tomatoes (yellow and purple and red and orange) because they looked really inviting. So after my workout this morning I gave it a try!
Mari's Don't-Be-A-Pansy-Just-Try-It Tomato Skillet:
4 mini tomatoes (one of each color) - chopped
1/2 cup black beans
1 handful of baby spinach
3 small cloves of garlic
1 egg
1 drizzle of your favorite oil
Drizzle your pan with a little oil, and saute your garlic and chopped tomatoes on medium heat. You can cover if you'd like to - it speeds things up
Add salt & pepper to taste
Once the tomatoes start to break down, add your beans, top with spinach and cover again
At this point start cooking your egg. I used a separate pan but you could put the egg on top of everything if you wanted!
Cook until spinach is wilted and your egg is done.
**You can season this however you'd like. I happened to stop by my favorite spice shop yesterday so I used some of the Berbere seasoning I picked up (it's an Ethiopian spice blend)
Put everything together and nom! I ate mine with a side of avocado toast. The tomatoes were OK. I'm still on the fence.....but the goopy insides were cooked-off so I didn't mind them so much.

Good for your for trying tomatoes! Tell me more about avocado toast? sounds bland
