Sheet Pan Dinners Are Dumb. Sometimes

So, usually I am not a big fan of one pan or sheet pan dinners. Most of the time the recipes call for ingredients that require many layers of cooking, or removing things from the pan and then adding them back in (which dirties another dish and in my opinion means that the recipe is no longer a one pot or one pan anything). And if it’s a one sheet recipe that goes in the oven, often times things have different cooking times and temperatures, so you end up with crunchy potatoes or really over cooked fish or chicken. But tonight I really didn’t feel like dirtying any dishes, and we happen to have a collection of foods that would work for a sheet pan dinner. So I made one.

Behold: the skeptic’s sheet pan dinner! And it doesn’t dirty ANY pans because I seasoned the potatoes and cauliflower in a gallon sized baggie 🙌🏽

Fingerling potatoes & chopped half a head of cauliflower tossed in your seasoning of choice. We did Wegmans basting oil and Trader Joe’s 21 seasoning salute. Salt to taste. 
Start them in the oven at around 375 until you feel like it’s time to add the meatballs. 

Add your IKEA meatballs (you could use other meatballs but would you really want to?) after around 15m of cooking the veg. 

Finish cooking everything through and put a salad on the side if you’re like me and have an obscene amount of salad in the fridge! 😅

I meant to take a photo of our plates because they looked good! But I was starving and scarfed mine down sooo.....make this and try it yourself!
