Sweet Potato Chipotle Chili
4 chicken apple sausages
1 red onion
1 big fat sweet
potato (seriously, get a big one!)
3/4 carton chicken broth
1
1/2T flour
1/2 can pumpkin puree
1 can corn
1 can
navy beans
3-4 canned chipotle peppers (not dried. I guess that
would work but I used canned)
1/2 cup half & half
2
granny smith apples
Salt and pepper to taste
Start
by cutting the sausage into 1/4" quarters (so about a quarter-inch
thick coin of sausage cut into quarters). Saute at the bottom of a
dutch oven/really big pot with a drizzle of olive oil. When some of the
brown tasty stuff starts sticking to the bottom pull the sausage out.
Chop
the onion while the sausage is in the pan. Once the sausage is out put
the onion in (you can add a little more olive oil if need be) and
sweat the onions for about 5 minutes or until soft and translucent.
While
sauteing onions peel and chop the sweet potato. Once you're done
chopping, go ahead and add it to the onions! Let this go for a while
(5-10 mins?)- it's just to start the cooking process for the potatoes.
Pull
everything out of the pan and add enough chicken broth to just cover
the bottom of the pan and dissolve the tasty brown stuff. Add a little
more broth and whisk in the flour. To this mixture add your pumpkin and
the rest of the broth and half & half.
At this point
you can add enough chipotle to your liking - the sweet potato and
dairy mellow out the sizzle so you may end up adding more later. I did
:) Once your broth is to your liking go ahead and add everyone to the
pot: sausage, potato, onions, corn and beans. Let everyone get to know
each other in the pot until the potatoes are soft.
Put
into bowls and sprinkle with diced (peeled) apple. If you want to add
the apple while cooking you can, but it'll lose its bite and tang.
